PT. Alam Jaya Rungkut, Surabaya, is a fishery product processing company from raw materials to semi-finished goods using the Air Blaze Freezer (ABF) freezing system. Products that have been frozen will be packaged and stored in cold storage so that the temperature of the frozen fish is maintained at its coldest point. Product quality is something that needs to be considered by the company in carrying out the production process to maintain the safety and health of consumers when the product is marketed. The company has implemented HACCP (Hazard Analysis Crital Control Point) in its production process, but there are still some findings, such as crosscontamination and the presence of metals in products, that can harm consumers when these products are marketed. This finding is a discrepancy between the HACCP Standard and its application in the field. From the findings obtained, it is necessary to analyze how far the company has implemented the HACCP system. Therefore, this study has the objective of evaluating HACCP performance in companies using the GAP Analysis method as a tool for assessing HACCP performance. Based on the results of the deviation assessment, it is known that the average deviation of the overall implementation of GMP is 19.81% and the SSOP gap is 20.49%. And the HACCP gap is 12.27%. From each assessment, corrections are made if there are parameters that are not in accordance with the HACCP guidelines, so that HACCP implementation is even better.
