One of the snack shops, especially in the field of bread, is the Olivia Bakery Balong pa nggang bakery . This competition is marked by the increasing number of establishments of similar businesses in the Balongpanggang Gresik district. The sale of a product is certainly determined by the existence of buying interest from consumers. Consumer buying interest is one part of the consumer behavior component. The purpose of this study was to prove and analyze the effect of service quality, taste and also on price perceptions consumer buying interest. While the type of data used is quantitative data . Source of data in research using primary data. The sampling method uses the slovin formula. The number of samples studied were 100 respondents. The results of the study show that service quality has a significant effect on consumer buying interest at Roti "Olivia Bakery" Balongpanggang Gresik shop . Taste has a significant effect on consumer buying interest at Roti "Olivia Bakery" Balongpanggang Gresik Shop . Price perception has a significant effect on consumer buying interest at Roti "Olivia Bakery" Balongpanggang Gresik Shop . Service quality, taste and price perception simultaneously have a significant effect on consumer buying interest at Roti "Olivia Bakery" Balongpanggang Gresik shop
